This past Saturday we were blessed to find apples in abundance and so reasonable. I have pulled out my cookbooks and am on a quest to make anything appley ( is that a word, hmmm, well it should be!). Here is one of my favorites, it is just so easy!
Apple Wrapper Pie
1 pie crust rolled out into 13 inch circle
1/3 cup brown sugar
1/3 cup flour
1/2 tsp cinnamon
4 cups of thinly sliced apples (about 4 medium)
1 tbsp. butter
1 tsp of white sugar

1.Heat oven to 400 degrees. Place pie crust on large ungreased cookie sheet. Cover with plastic wrap to keep moist while you make apple filling.
2. Mix brown sugar, flour and cinnamon in large bowl. Stir in apples. Mound apple mixture in center of pastry within 3 inches of edge. Cut butter in small pieces, sprinkle over apples. Fold edge of pastry over apples making pleats so it lays flat on apples. Sprinkle white sugar on pastry.
3.Bake 30 to 35 minutes or until crust is light golden brown. Cool on cookie sheet on wire rack, serve warm with vanilla ice cream or cool whip. Your people with love you for it!

I'll definitely give this one a try! We really enjoyed y'all coming up here! And you left a beanie baby dog that Hannah has become very attached to! (Really, I think she's going to get one for Christmas!)
