My family has many traditons that I think are so neat. Last week I was so happy to be able to help with some of them. The first one I want to share is, The Great Sausage Making of 2008. When I was little I remember Daddy and Papa making sausage, hog head cheese, and my Meme frying out cracklins. Papa John has recently been on a sausage making kick, so Wednesday nightRachel and I rolled up our sleeves and help make close to 50 lbs of sausage!

The meat all seasoned and ready to grind

Rachel and I threading on the casings to be stuffed, to make link sausage.
If inquiring minds need to know, we used natural casings, you can read about that
here.

Stuffing the casings

Rachel putting some muscle into it.

One of the 3 links we made, how cool is that?

Our breakfast Thursday morning!
