Monday Meals

Best Ever Pasta Salad

INGREDIENTS

  • 1 (16 ounce) package dry rotella pasta
  • 2 large cucumbers, peeled and cubed
  • 2 roma (plum) tomatoes, chopped
  • 2 cups mayonnaise
  • 1 (8 ounce) container sour cream
  • 2 tablespoons dried dill weed
  • 2 tablespoons lemon pepper

  • DIRECTIONS
  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Combine pasta, cucumbers, tomatoes, mayonnaise, sour cream, dill weed and lemon pepper. Serve as is or chill for 45 minutes.
I made this last week and it was so gooooood! I love pasta salad and this is one of the best! I also grilled 2 boneless skinless chicken breasts, that I seasoned with dill and lemon pepper. I let them cool and cut them in cubes and added them as well!

Really Good Cream Cheese Icing!

Last night I made a Red Velvet cake and I tried a new icing recipe. I love cream cheese icing, but to me it is usually to sweet. This recipe solves that problem, it is really good. It has a great consistency and spreads really well!

Cream Cheese Icing

3 - 8 oz blocks of cream cheese (softened)
1 1/2 sticks of butter (3/4c.) (softened)
2 1/4 cups of confectioners sugar
1 1/2 teaspoons of vanilla

Beat cream cheese and butter until smooth. Add sugar and vanilla,
beat until light and fluffy.

Yum!
